Job Summary:  The Fort Valley State University (FVSU) Meat Processing Plant is part of the Georgia Small Ruminant Research and Extension Center. The Meat processing plant processes red meat from live animal to packaged product and operates year round, Monday through Friday, from 8 a.m. to 5 pm.

The Meat Plant Sanitation Coordinator is responsible for the overall sanitation of the meat plant to include the manufacturing, distributing and maintaining of safe and quality food by following allergen controls, food defense, SSOP (standard sanitation operating procedures), GMP (Good Manufacturing Practices), and HACCP (Hazard Analysis & Critical Control Points).

Duties and Responsibilities:

  • Oversees all sanitation functions for plant
  • Follows written guidelines for SSOP, GMP, and HAACP
  • Ensures equipment is functioning properly
  • Assists in training sanitation personnel in proper cleaning,       chemical use, safety procedures, SSOP’s, and GMP’s
  • Schedules major cleanup projects with plant personnel
  • Manages chemical usage and cleaning logs for entire meat plant
  • Maintains inventory and proper storage of all sanitation supplies
  • Manages all sanitation schedules around production schedule
  • Reports all food safety and quality issues to proper management
  • Performs other duties as assigned

QUALIFICATIONS

Minimum:

  • Bachelor’s degree
  • Two years working in the food industry
  • Computer experience with Microsoft Office Suite
  • Valid driver’s license

Knowledge, Skills and Abilities:

  • Ability to understand and follow oral and written instructions
  • Ability to communicate orally and in writing
  • Knowledge of occupational hazards, equipment related to the field

Preferred:

  • Familiarity with industrial meat packing food processing equipment
  • USDA/HACCP Certification
  • Safe Quality Foods (SQF) background
  • Knowledge of Lean Manufacturing

Working Conditions:

  • Working around and with chemicals
  • Requires the use of safety equipment such as safety eyeglasses, hearing protectors, work boots, cold-atmosphere clothing and hardhats
  • Evening, night and some weekend work will be required
  • Travel to attend meetings, workshops, and conferences
  • Work with students

Physical Requirements:

  • Standing and walking for extended periods
  • Frequent bending, stooping, kneeling
  • Frequently required to use hands and arms
  • Regularly lift and /or move up to 70 pounds
